One thing you probably didn’t know about Pho in Vietnam is that the selection of meats varies quite a bit from north to south. In the north (Hanoi), the meat options are limited with only a few cuts available. In the south (Saigon - HCMC), there are quite a few more exotic meat options. The south in general provides for a more ‘exciting’ bowl of soup than the north. That is something that I (a northern girl) must admit. :) Now you know more about your Pho in Vietnam!
